Sushi break


Now that I'm in Colorado I have to find a new set of favorite restaurants. I'm hunting down Thai, Chinese and Sushi first. Mexican will come later – being hispanic by birth (Mom's side of the family) and having grown up in El Paso, my view of Mexican food is very different than most restaurants.

I've found a few Thai places but none that jump out and grab me as “the best”. There is one more I need to try over by Cheyenne Mountain (you know, the number one place for foreign nukes to gather in case of war) that was voted best of colorado springs by the local paper. Chinese is also up in the air though I found a little hole in the wall next to a Target that was pretty good. Can't remember the name of course. I just remember to look next to the Target on Academy Blvd.

But sushi is a problem. We had several very good sushi places in The Woodlands (north of Houston, south of Conroe, Texas). My wife and I love what they call down there “Tiger Eye”. When I came to CS, I tried a couple of places. None had it on their menu. Several said they could make it. One did – and it was nothing like what we got in Houston. One place – Jun – said they could make it if I just tell them what's in it. So on Memorial Day I went back to visit the family (who are still trying to sell the house down there before coming up here) and we went for sushi. We got the recipe:

Smoked Salmon, Cream Cheese, and a Jalepeno slice, rolled in seaweed then one side is lightly dipped in tempura batter and fried very quickly. This is then rolled in rice and wrapped in rice paper (I think its rice paper).

It comes out slightly crunchy (the rice paper and fried batter) and one side is warm. Served at room temperature it's great. But eat all of it at once because it doesn't store well and eating it out of the fridge the next day just isnt' the same.
